Consider Rebula "Extreme" Amphora, Guerila - 2016 Rebula (known as Ribolla Gialla in Italy) is the grape of choice in Slovenia. This iteration from Zmago Petri at @guerila_wines is made from grapes that are hand harvested late in early-October in the Planina-Vipava valley (flysh soils). The combination of whole-...cluster and de-stemmed grapes spends six months macerating in 800L clay amphorae. Spontaneous fermentation with natural yeasts lasts four weeks with no temperature control. The entire time is spent on lees until bottling (with no stirring). The wine is then aged for two years in clay amphorae Unfined and unfiltered with minimal addition of sulfur. Skin-contact wines are a blast to pair. Find notes of dried apricot, hay, white pepper, cumin, dried white flower on the palate. Pair with chicken tagine, fried seafood, Ethiopian food, even kimchi. Fun fact: There has long been an exchange of winemaking techniques between Italy and Slovenia. Presently 200 meters east of Slovenia lies Oslavia/Oslavje, which stills uses signs in both languages and is home of a few names in wine you may recognize more readily than Petri's above: Gravner, Radikon, Princic, Primosic. There are delicious sakés being made with quality ingredients, but low polishing rates, therefore falling outside of industry standards. Tae no Hana "Sublime Beauty" Arabashiri Kimoto Muroka Nama Junmai Genshu Saké from Moriki Brewery is a great example. It's only polished to 85%. It’s also got a VERY long name. And funnily enough, most of those words signify what does NOT happen in the brewing process. Let’s break them down. Tae no Hana Sublime Beauty is the name of th...e saké. Arabashiri means free-run, not pressed. Kimoto is a traditional labor intensive method of making saké that allows lactic acid to develop naturally so that commercialized lactic acid does not have to be added. (There’s a great article from @punchdrink on Kimoto from Feb.) Muroka means no charcoal filter was used. Nama is unpasteurized. Junmai...we’ll get to that next week. And Genshu is undiluted. So, take what you will from that mouthful, but know that this is some exciting, seriously tasty saké with boatloads of umami and a surprise finish of refreshing apple and rice bran acidity. This wine has approximately 50% whole bunches in the ferment. It’s a Pinot Noir from Omihi, New Zealand that comes from two vineyardsone on the slopes and one in the valley. Grapes from the slope bring richness and flesh to the wine, while those from the valley, where the soil is glacial gravel with layers of silt, offer floral aromatics and length. The structural elements gained from using whole bunches serve to promote longevity.
