Via New York Business Journal: Black Barn Restaurant, which serves farm-to-table cuisine in a barnlike location in the Flatiron district, has been waiting for the green light on indoor dining after finding that outdoor dining alone was unsustainable. It normally has 300 seats, but it was only able to have 30 outside and found that this setup did not generate enough revenue, especially when it rained. Black Barn Restaurant found that it was losing approximately $1,000 per day... with this setup. "'It was better to close and lose less money,' says John Doherty, chef and owner of Black Barn Restaurant. "Black Barn Restaurant will seat customers both indoors and outdoors, although Doherty says they probably will not have more than two weeks of comfortable weather for outdoor dining. The restaurant will be taking temperatures upon arrival and recording guests’ contact info should they need to contact them later about an exposure risk. Additionally, Black Barn Restaurant upgraded the air filters of its AC units, will sanitize surfaces with a biotech product, and provide biotech hand sanitizer to guests and staff. To ensure adherence to the 25 percent capacity limit, Black Barn Restaurant has developed a new floor plan that will be entered into its reservation system so the system won’t accept reservations beyond the limit. Walk-ins will then be managed by viewing the number of occupied seats. "‘While opening at just 25 percent will not significantly boost business, if handled carefully and guests show up, we can begin to get back to work, slowly dig out of the financial hole we are in, and start getting back to what will be a new normal,’ Doherty says."
