We have our own whisky! Sort of. We selected and bought a single barrel of this exquisite whisky from Starward. It’s a four years old Australian single malt, aged first in a red wine barrel and finished in a charred American oak barrel. Tasting notes include dark cherry, toffee and tobacco. 110.6 proof. No fining or filtration I reply. So’s my wine, but it’s ...not cloudy. Blank stare. Sounds like dodgy winemaking he winks. This is all the rage right now we exclaim. Ah, retorts Tim, the trouble with the next best thing isthere’s always the next best thing. In quality, consistency and value Tim’s wines can’t be beat. The classic Barossa varietals, no pesticides, old dry grown vineyards, indigenous yeasts, unfined and unfiltered, minimal sulfur. It’s as natural as they come, though stable too. If we were talking Rhone wines from 80-100 year old vines nobody would bat an eyelid at $45/bottle or more wholesale. Tim’s vines age up to about 105 years and they cost less than that on the shelf. A staff of one (just Tim) keeps costs down I guess. James Suckling refers to Tim as the the Mataro man, a grape whose flavor profile Tim describes as Chinatown on a warm summer’s night. - Little Wine Company
