This is The Bilbao, Chef Paul’s tribute to his favourite walking town in the northern Basque region of Spain. With this board, we hope to transport you, if only for a little while, to another place and time where the sun is beating on your face and the warm smell of summer and wild sasiarrosa are in the air.
