Hi, everyone. Every time I research Irish Soda Bread recipes I learn something new. A few years ago, I discovered that this bread is, in fact, a big scone. More recently, I have learned that Irish Soda Bread with currants (preferred) or raisins (acceptable) is called "spotted dog." How fabulous is that! To help celebrate St. Patty's Day I will be bringing "spotted dog" muffins and loaves to Four Seasons and Healthy Living. P.S. Irish soda bread is even better toasted. However, due to it's tender crumb (think scone), toasting in a toaster can be tricky. The loaves can be heated in an oven at 325 for 10 minutes. Slices can be toasted in a small pan with a little butter, or use a toaster oven, possibly the easiest option of all. Enjoy!

St. Patrick's Day is upon us and so is Irish soda bread! I will be bringing Irish soda bread muffins to Healthy Living and Four Seasons tomorrow, as well as chocolate cupcakes and apple galettes. Nothing will be green, however. You simply have to draw the line somewhere! Enjoy!

One of the things I like best about baking desserts (besides eating them) is the challenge of tailoring those desserts to reflect the colors and moods of the season. That being said, you won't be at all surprised by my offerings this weekend . . . mud-puddle cookies and almond "sticks in the mud" cookies. Trust me, they taste a lot better than they sound. Also being offered are my signature chocolate cupcakes with vanilla frosting and lemon pound cake. Spring-like weather can't be too far behind (unless you've already heard this weekend's forecast.) SIGH.
