Part 3: Dogs are my favorite People Sculpting a chocolate cake topper I love painting everything. My favorite paint is powdered petal dust colors mixed with lemon extract. I can’t seem to resist this method even when I know it’s not the best way to approach a job The brush I’m using for detailing is a number 2 outliner brush ... PS: This is definitely one of those cases where if I had it to do over again I’d mix the color into the chocolate first, and then dust the final sculpture to get the subtle nuances and shades of the dog coat. (just for the record, not the first time I’ve promised myself that ) Painting modeling chocolate with this powder/lemon extract mixture is a sure fire way to have all the imperfections and cracking highlighted and emphasized. It also can create a cool matte finish and texture that I like. Part 2: Love is a four-legged word. Sculpting a chocolate cake topper. The trickiest part about sculpting thin pieces of modeling chocolate onto a wire armature, like these spindly mini-dog legs is that because the wire is still somewhat pliable you can get cracks in the legs. I try to address this by being gentle with the figure and then also using freeze spray so that the legs stay stiffer as I’m transferring the dog to the actual cake. I still know the cracks will occur ...anyway and I am always prepared to smooth them out as needed. Another thing you can see in this video is the visual references. Chocolate cake topper Part 1: I Shih Tzu not I starting with a simple wire Armature and then seeing these things come to life. Adding modeling chocolate to the armature gets surprisingly heavy very quickly so we start with a little bit of aluminum foil as filler and then add the chocolate. I think everybody has their favorite tools when it comes to sculpting in modeling chocolate, and I really like going back-and-forth between silicone, plastic bone tools, steel and... wooden tools. What are your favorite tools? The warmth of your hands is a great tool to smooth out the bumps. The first time I met Buddy was 16 years ago when we competed against each other in one of the first Food Network challenges. Sometime later I contacted him and asked if he knew anyone who had a edible color printer and he said, come on over to Carlo’s and use whatever you need. He gave me a full tour of the place showed me how to use his color printer. Over the years he’s always been super generous whenever I run into him and given me great advice.
