So you’ve done the whole sourdough bread thing. Finished Netflix. Marie Kondo-ed every cupboard. What’s next? Whiskey of course. Available in both our walk-in merch store and our webstore from November 2nd, we bring you the stylish, elegant, classy and very practical, limited-edition Dead Rabbit shot glasses. These babies in our signature black and red colors will be sold in pairs, of course, and come in a fancy presentation box. (Perfect for Christmas hint, hint.) And yes, we will ship them overseas.... Also, in case you weren’t sure how these things work, we’ve also produced this handy instructional video for you. It’s pretty straightforward, but feel free to loop it you know, just to get the technique right. Got that? OK then, hit me with your best shot.

So when we do re-open on November 2nd everybody touch wood, please what will things be like? And, just as importantly, what will we be offering? As you probably know, we'll be operating at 50% capacity. With the original Taproom home to our new merchandise store, we’ll be welcoming you back into the Taproom extension, Parlor and Parlor extension. And you’ll come in via the Taproom extension door at 32 Water Street, not the old entrance at number 30. Also, we won’t be ser...ving the fantastic Darkland 3 drinks menu that we launched just days before shutdown (that’ll have to wait until we’re back to 100%). But don’t worry, the drinks will still be stellar and of course, we’ll also be offering a food menu with many of your favourites. So then, not quite business as usual. More, business as unusual. But we’re OK with that. In fact, we’re really looking forward to it.

Is it raining where you are? No? Give it time. It’s been tipping down here in NYC lately and the umbrellas have been working overtime. But not the one you see Laura with here. Because we’re keeping this one for you. It’s the new, limited edition, dual-colour, inverted style Dead Rabbit umbrella. Quite a mouthful, we know. But here’s the thing. As well as looking great, the umbrella has a clever self-closing mechanism designed to push water away protecting you from the rain ...and a rain-soaked umbrella. Very handy when you’re going into or leaving the house (or favourite bar). You’ll be able to order your umbrella through the website from the 2nd of November, or nab yourself one in our walk-in merch store. But there’s a catch. We’ve only got 100 of them. So don’t wait for a rainy day.

Six classic cocktails. Six Dead Rabbit originals. One large-format drink for sharing. That’s our to-go drinks menu, which will be available from Monday 2nd November. We’ll be delivering anywhere below Brooklyn Bridge/Chambers Street or you’re free to call in and pick up your order in person. We’ll even supply the block and pebble ice if you like. ... All the cocktails have directions on the label (we're even going to make instructional videos for each drink too). The stirred drinks are pre-diluted, so just keep in the freezer and pour into a chilled glass when you’re ready. Now, for the shaken drinks you are going to have to do a bit of work you know, maybe like cut and squeeze a lime. But all that effort will be rewarded in the end, we promise.

Some were too sweet. Some were too dry. And one or two were just right. But they still had to be checked. All 200 hundred of them. That’s how many classic cocktails Jillian has taken apart in the past few weeks, finetuned and then put back together.... As Jillian explains, Tastes change, so it’s a good idea to revisit these classics every so often and see what a difference just tweaking an ingredient, say, or changing a spirit really can make. Well, someone had to do it, and as we all know, there’s no-one better to get it done. We look forward to letting you taste the results of Jillian’s hard work for yourself when we reopen.

Four weeks to go. Until what? Until well, something. Sorry we can’t be more specific. But here’s what we do know. On Monday 2nd November the Dead Rabbit will reopen. In some form. We hope hope that it’s at 50% capacity. That’s the number we need. And if we get it, we’ll be very happily welcoming you back. Our bar’s been quiet too long.... But, if the city says no to 50%, we’ll still be back with our new walk-in merchandise store, fully stocked with all our cool new swag. (This will all be available then through our website then too.) Plus we’ll be launching our killer to-go food and cocktail menus for collection in person or delivery in the immediate area. So, four more weeks to go. Until what? Until the Rabbit returns, that’s what.

One of the things we’re looking forward to about opening our merchandise store in November is that we’ll finally be able to sell bottles of this bad boy and in a fancy gift box too (something we weren’t able to do previously). Made in The Liberties, the historic Dublin quarter that for centuries was the home of Irish distilling, the whiskey with our name on it is a fine blend of malt and grain whiskeys that’s been aged for at least five years. Only then do we let it out to ...play. If you haven’y tried it yet, you should. The taste is complex, malty and spicy, with strong hints of bourbon and vanilla. You can enjoy it neat or on the rocks. And, as you might expect, it also mixes very well. It is, literally, the spirit of the Dead Rabbit bottled. Which is why we call it a measure of attitude.

The text has been written. The pics have been taken. It’s done. Ish. (In fact, there’s still a good bit ish to come, but for now it’s done.) Yes, our new book is off to the publisher. Paddy Drinks, about modern Irish whiskey cocktails, features recipes for some 90 drinks, discusses how to work with the different styles and flavours of Irish whiskey, and includes a lot of other whiskey wisdom too (ours and other people’s). Oh, and about that name. We know it might raise an ey...ebrow or two. But there’s a very good reason for it, and you’ll be able to read it when book comes out in 2022. Yes, you read that right. We know. ‘Something something publishing cycles, something something.’ OK then, 2022 it is. Still, all good things come to those who, you know, something something.
