What's for Lunch? (My Fave Kitchen Staples) Working from home yesterday, I had 15 minutes to create and eat lunch. That's when I got creative and cobbled together healthy ingredients that are already in my fridge. I started with a fresh farmers market carrot, and added in a scoop of Ithaca Cold Crafted Hummus. Their flavors are unique and the ingredients read as if I had made it myself. The lemon dill is bright and I never tire of it but today I tried the red pepper variety and it didn't disappoint. Another favorite is The Food Should Taste Good Multigrain Chips. Could eat the whole bag---but much wiser to put a handful on the board. And as an extra treat, I discovered a stuffed grape leaf. Hoping that I am as easily inspired tomorrow.
Try It---You May LIKE it!!! As a child I couldn't even be in the room when seafood was on the dinner table but now I can't get enough. Salmon, flounder, shrimp and even oysters are among my favorites. Experimenting with Kimchi This is a true example of my "healthy assembly" philosophy. Just a little cooking can go a long way if using some high quality prepared ingredients. The comfort of rice, greens and sunny side up eggs along with the less familiar bamboo shoots and kimchi. Tonight we are stretching my family's taste buds and a warming winter dinner is created.
