This is almost like opening a brand new restaurant. Except we only had one day to plan it. Last week, we were producing 60 bento boxes with 8 hours of work, today we produced 150 in 3.5 hours. Planning ahead and having some extra hands on deck certainly makes a world of a difference. Needless to say, your donations have been the key in making all this happen. We are on track to delivering 850 bentos by the end of this week. Since the generosity far exceeds what we had originally planned, we're working to see how this fund can also help other restaurants pay their staff (also allowing us to feed even more health care professionals). It's been a week since we started packing bentos at 886. What was a vibrant neighborhood restaurant a month ago is now a full on bento operation...and we're feeling extraordinarily blessed. Within a week, more than 200 of you have donated to our cause. Happy to say that we have hired back a few of our staff to help out with the operation. We went from cooking and packing 50 bentos a day to doing 150 daily. We now have 8 hospitals in rotation and the list is growing! Shout out to @shenghi for selflessly lending us his car, making our deliveries SO much easier. We're also working on getting other restaurants involved, stay tuned!
