Not sure if most people go through all this however, I love this stuff but it can be bitter. That is why I peel it and it takes all that bitter taste away. I use two bowls to separate the leaves and buds and lay the stems on the counter to peel when afterwards. Anyway Hope this is helpful

Ok so I’m experimenting. My grandmother made home made macaroni, however never cavatelli. so I went on line. While all say no eggs some say flour and others say... semolina. So I did two-one with Durum double zero flour and one with straight semolina. let’s see if they come out. Does any one have advice for me? See more

Onion Pie is a traditional Good Friday dinner for our family that we all love. Here is the recipe (except I over cooked it LOL) Try not to get it as dark as mine 2 loaves of pizza dough 6-8 yellow cooking onion... 1 Bag of spinach Italian oil cured olives Capers 2 or 3 tomatoes Olive oil Stretch your dough and let it raise. I begin by caramelizing the onions in olive oil on med heat. Then I add the capers and tomatoes ( peeled is better but not necessary). Continue cooking and add the spinach until wilted. Add the olives. Put the mixture into a sieve or colander and drain some of the liquid or pizza will be very wet. Layer your filling over the dough and bake probably around 475 degrees?
