Happy Passover! Learn how to make Salted Matzah Brittle with Birthright Israel alum and cookbook author, Jake Cohen - the perfect way to use up your leftover ma...tzah. 4 sheets matzah 1 cup light brown sugar 1 cup (2 sticks) unsalted butter 1 teaspoon vanilla 1 teaspoon kosher salt 1 cup dark chocolate chips 1/2 cup milk chocolate chips 2 tablespoons coconut oil 1/2 cup white chocolate chips Flaky sea salt, for garnish 1. Preheat oven to 350F and line sheet pan with foil. Arrange matzo on sheet pan, breaking sheets to fit. 2. In a small saucepan, combine brown sugar and butter over medium-high heat. Cook until sugar dissolves and the mixture is violently bubbling, 5 mins. Remove from heat and stir in vanilla and salt. Pour over the matzo, spread evenly. 3. Bake until caramelized and bubbling begins to dissipate, 12-15 mins. Remove from oven and immediately scatter dark chocolate chips over top. Let sit for 5 mins, then spread evenly over the matzo. 4. In a small bowl, stir melted milk chocolate chips with 1 tbs of coconut oil. In another small bowl, stir melted white chocolate chips with the remaining 1 tbs coconut oil. Drizzle with splatters of melted milk and white chocolate. 5. Sprinkle with flaky sea salt, then refrigerate until set, ~30 mins. Break into pieces and serve.
