We apologize for the inconvenience caused by our closing yesterday, but we love being a part of families special celebrations. What a day to release the last of our un-aged brandies or Eau de vie-Wassermelone. Locally grown (non-certified organic) watermelon from Second Draft Farms in Bloomfield who farm with draft horses, and lots of care for the soil. This brandy is proofed you 86 proof giving it a bit more heft and lengthy finish. This is a first for us, and we don’t know many other distilleries producing it either, so we are again in unchartered waters. One more long awaited release we will have available today-Erdbeer or Strawberry. Another traditional Austrian style Un-aged fruit brandy or Eau de vie. This one has also been rested in stainless tanks for a year, bottled at 80 proof, and is made from 100% Finger Lakes Strawberries. A mix of two varieties, including our favorite sweet local variety called Honeoye. It’s been a busy fall, and we are planning a number of special small batch releases only available here at the distillery. This has been over a year in the making-an Austrian schnapps made from Finger Lakes NYS sweet cherries. Half of our family still lives in Austria, and we are proud to carry this tradition on here. Kirsch is bottled at 80 proof with a soft sweetness, fresh fruit forward nose, and lovely long finish. We have patiently waited over a year for this cask to be ready to harvest for Old Growth. This is the oldest in our series of Tree Spirits, and we are thrilled with how it has matured. All of these had to be approved as Spirit Specialty by the TTB prior to us beginning production many months ago, and now all the hard work has paid off! We are excited about this whole project, and think it has so much potential to gain recognition in the spirit world as a fun new category.
