Served as an accompaniment at Indian Accent, various combinations of ‘raita’ have been playing musical chairs on our menu. Here's one you may like to try at home- WASABI & CUCUMBER RAITA. All you need is greek yogurt or full fat cream yogurt: 150 gms; chopped cucumber: 50gms; roasted cumin seeds: 12 tsp pounded; wasabi paste: 2 tsp; salt & sugar to taste; chopped mint leaves: 12 tsp; crushed wasabi peas (if available): 1 tsp... Mix the yogurt with sugar, salt and roasted cumin seeds. Adjust seasoning. Add the wasabi paste according to taste, make sure the wasabi flavour is not too strong.
