Kings County Distillery 03.06.2021

We have always been incredibly proud of our tour program at the distillery. Being able to engage with our community is such a big part of who we are and how we’ve been able to grow over the years. We are happy to finally be able to bring back tours for the first time in over a year. For everyone’s safety, tours will be limited to 8 people and guests will remain socially distant at all times. Proper masks or face coverings are required and the majority of the tour will take place outside when the weather permits. Check out our Covid safety protocols on our website and sign up and learn more about whiskey history, distillation and barrel aging! Bringing back tours is just one step towards something that feels a little more normal, and precautions still need to be taken, but it’s a small and big step at the same time. See you soon.

The word whiskey comes from the gaelic phrase, "uisce beatha" meaning water of life. Originally produced by monks to make medicine, the Irish invented whiskey, though some in Scotland may disagree. During a wave of immigration that saw nearly half of Ireland's 1840 population move to the US, the Irish brought distilling here to American shores, especially to Brooklyn, where the industry thrived until just after the civil war. Barrel finishes are trending in American whiskey. Taking cues from the scotch whiskey model, American whiskeyfirst aged in a new barrelwill then go into a second barrel for "finishing," essentially taking on the characteristics of whatever the second barrel held before to give the whiskey an added twist of character. While this secondary is traditionally driven by a fortified wine like sherry or port, some distillers are finishing in red wine barrels, creating a whiskey tha...t borrows the heft and richness of wine to add depth and tone to bring two classic flavor profiles together. For this latest release of a wine-finished bourbon, we turned to our friends at Channing Daughters, who are known for unusual varietals at their Bridgehampton Winery. This release takes 2-year old bourbon and finishes it for another year in a Dornfelder and Blaufrankisch wine cask which are then blended together for this limited release. This three-year old whiskey has notes of plum, prune, white peach, blackberry jam, raisin, lemon zest and caramel cream with cooked fruit, cranberry juice and dried herbs. We are incredibly excited to announce the 750ml and latest release of BARREL STRENGTH BOURBON! Barrel proof is arguably where there is most audience excitement right now in American whiskey and our entry into this hottest (right?) category has always been met with praise from critics & enthusiasm from customers. Our latest edition barrel strength bourbon has a 3 year age statement, but contains barrels as old as 5.7 years. This is intense, flavorful, versatile bourbon at 63....7% abv (128 proof). Notes of blackberry, fig, raisin, tobacco, brown sugar, toasted oak, and dried cherry on the nose, with ripe vine fruit, wild cherry, dark caramel, gingerbread, and a hint of cream soda on the palate. Never chill filtered, this is a richly textured, velvety whiskey for being such a high proof. We encourage blind tasting with other whiskeys of similar proof for a fun comparison.
