A reason to celebrate: In April and in partnership with @rethinkfood.nyc we cooked and provided 6000 meals (300 meals a day 5x week) for our neighbors in need of meal assistance and also to NYC Health Gotham/Goveneur! When we first started the program, we thought we would be able to bring on more people from our team to help but given that most are in HS, parents felt more at peace having their kids them stay at home. So it ended up being just the two of us where Kyo would be in the kitchen cooking up the meals then passing them off to Moonlynn to assemble and pack up front. In addition, we were both balancing our regular takeout serviceneedless to say it was a bit anxiety inducing As time went on we were able to bring on 1-2 more people(woohooo!) from our team to help balance, cook up and pack and it’s been so rewarding

Through this partnership with Beyond Meat, we are giving restaurants the opportunity to bring back members of their team to help us create meals for those in need. Our incredible Rethink Food team and restaurant partners like Chef Kyo Pang and Moonlynn Tsai of Malaysian-style cuisine Kopitiam in Manhattan’s Chinatown are turning into relief hubs, providing meals to low-to-no income individuals (with a meal in addition). That’s 200+ daily meals to our neighbors, those in need, and heroes to NYC Health + Hospitals/Gotham Health, Gouverneur and Madison Hamilton House. The classic kopitiam cup and saucer emerged in the 1930’s and we pulled inspiration from this timeless beauty for our own design to represent our Malaysian kopitiam culture. You’ll notice the detail of the cream-colored hoodie alongside the bold, earthy green color of the prints. You’ll even find old-time kopitiam signage charm and certain batik elements sprinkled throughout. It’s a rendition of vintage kopitiam culture weaved throughout our own funky, ‘cincailah’ personality. This is us starting our own tradition in homage to all the kopitiams before us.

At Kopitiam, our entire team is considered family (along with our guests!) When Kopitiam re-opened at our newest location, it was important to the both of us (Kyo and Moonlynn) to hire a kind and hard-working team from the neighborhood. We coincidentally ended up hiring, basically, the whole basketball team from Baruch HS haha! For most of the staff, this is their first job and it’s been rewarding watching everyone grow into kick ass individuals. Since we both grew up in the ...restaurant industry, it’s also important to the both of us to provide mentorship to staff who show dedicated initiative in pursuing the culinary path. Everyone, meet Kai! We’re proud to introduce him to you. He’s been with the Kopitiam fam since opening and is applying for culinary school next year. To give him a hands-on learning experience of what it would feel like to own a cafe, we’re providing a designated space in our display case to feature one of Kai’s creations, with the caveat that the dessert of his choice must have Malaysian influence. 100% of the proceeds from the sales of Kai’s featured treats will directly fund his culinary school tuition. Our goal as the business owners is to guide and mentor him with a realistic experience of the business, general overview of inventory, and being flexible with potential unforeseen challenges. I’ve decided to apply for culinary school where I can learn even more about the pastry world. I am hoping that through my journey in culinary school, I will be able to encounter other pastries I have never heard of, as well as master the techniques used to make traditional pastries. I really enjoy making specialty cookies and tarts. Many things to be grateful for today. 1. Wednesday=day off 2. A fantastic latte from @madmanespresso 3. An extremely kind review from @pete_wells in today’s @nytimes, just in time for our 3 month bday!!!! It’s been quite the ride and growing pains for sure, but we’re slowly hitting that sweet spot and getting into the groove of things. Our initial plan was to feature 80% drinks, coffee and snacks and 20% food items (hence our counter setup and tiny kitchennot much bigger than the kitchen at the old spot), but things took a major change and went vice-Versa so a major thank you to our wonderful community for being so supportive and patient as we grow. We love you and can’t thank you all enough!
