This Friday is Lunar New Year’s Day. It’s one of two biggest holidays in Korea (the other day being Harvest Day). We usually eat rice cake soup, Jeon (pan-fried meats and veggies), Jopchae, and Galbizim (braised short ribs). We haven’t seen our Korean family for over a year due to COVID so we made some Galbizim thinking about them. This dish is made with dry-aged short ribs, daikon radish, potatoes, carrots, and shitake mushrooms and braised in soy sauce marinade (soy sauce, garlic, scallion, onion, sugar, and black pepper) for 4 hours. It’s great by itself but better with plain rice. Each package contains two portions..or one if you’re like me. Very limited quantity available.
