Monger's Palate 06.11.2020

Cheese towers are one of our favourite things to make. As our city is still celebrating in it’s own way, it’s nice to have a little (or a lot) of cheese to share for birthdays and mini weddings. We customise to your taste and the seasonal feel of the gathering.

Fall is here and the glorious 2019 vintage of @roguecreamery Rogue River blue has just arrived! Winner of the 2019/2020 World Cheese these rich fruity wheel are made only of fall milk, wrapped in pear brandy soaked Syrah grape leaves and aged for a year. Get some while you can as stock is quite limited. It makes a perfect pairing with Port and slice of crusty @limprimerie Miche.

Nothing to say except that we have the inimitable Loire Valley Chèvre Chabichou Du Poitou in. I did a little dance around the box out of joy. Dense cakey interior, oozing outer creamline. Lemon. Grass.

Fresh in, raw milk Taleggio Vero Sergio from third generation cheesemaker Sergio Arrigoni. While PDO Taleggio abounds, this raw milk wheel is the most complex and distinguished we’ve found from Val Taleggio. The saline funkiness has balanced acidity and rich mushroom notes. Try it with @astorapiaries wildflower honey and ‘A Vita’s Rosato Calabria.

New bread!Starting this week Thurs-Sun we have bread from one of my favourite NYC bakeries @limprimerie ! Gus is from Nancy, France and makes incredible breads and pastries in his Bushwick shop. Photos are of the Miche, Levain, and La Moisson. Baguettes, Demi baguettes, and other loaves will be available!

Mould and fungus can be big source of misinformation amongst cheese lovers. To put it briefly, mould and fungus controlled by the cheesemaker are good, including yellow, blue, white, green, and orange. We typically advise to avoid clearly red or black moulds. A healthy cheese will grow and attract mould and fungus. As our culture is moving towards an acceptance of what food naturally looks like unsanitized, we can appreciate the beauty of weird fungus. The Chrysosporium Sulfureum on Tomme de la Chataigneraie was truly stunning this morning.
