OLIVER'S: Good Grace: WNY Chefs Celebrate Daniel Oles | March 19, 2020 Ross Warhol is the executive chef at Buffalo’s Oliver's Restaurant. He trained at CIA and earned a second degree in pastry from the esteemed school’s Greystone program in California before going on to work as a stagiaire at some of the finest restaurants in the world, such as The French Laundry, Ubuntu, el Bulli, and Franzen Lindeberg. In the summer months he’d return to Western New York, working as the ex...ecutive chef at the Chautauqua Institution. As early as 2009 Warhol began incorporating the produce, proteins, and cheeses of Chautauqua’s local farmers into his menu, which ultimately led to planting and tending his own restaurant garden on the Institution’s campus. Warhol’s commitment to local hasn’t wavered since his 2016 arrival at Oliver’s. For almost a decade the restaurant hosted one or more dinners on the farm each summer, bringing city guests out to enjoy what Dave and his staff had found when they first visited in 2009: peace, beauty, and produce that far exceed anything a chef or shopper could source in WNY.... Chef/owner James Roberts met Daniel Oles in 2011 on a farm tour for chefs. Shortly thereafter he began sourcing produce from the Oles family farm while working as the executive chef of Park Country Club. When he left PCC to launch Toutantand later its sister and Roberts’ passion project, DobutsuJames continued to nurture, support, and rely on his relationship with Daniel Oles and Promised Land, as well as other local farms. While it has evolved a lot over time, it has also always held true to its roots. Executive chef Mike Obarka was an early adopter of the farm-to-table concept. BILLY CLUB: Good Grace: WNY Chefs Celebrate Daniel Oles | March 19, 2020 When Chef Nate Beardsley assumed the position of executive chef at Allentown's sweetest nightspot, Billy Club, it was fresh off a long stint working in the fields of a farm located in the Southern Tier. Beardsley, who came up in Wyoming County, was no stranger to farms, but it was his time as a sous chef working under Edward Forster that really crystallized his commitment to local ingredients. At Billy C...lub, Beardsley has been able to share his culinary point of view through the lens of WNY's seasons and farms. Billy Club has been a customer of Daniel Oles and Promised Land since its inception, using local ingredients on its menu year round.
