This is so true and I have personally experienced the difference. However, sometimes we have to make a choice whether we want to satisfy our health or our emotional needs....both are very important to our overall well being. Even so, there is a difference between high quality cooked vegan food and vegan "junk" food. For example, steamed vs fried; quinoa vs fries. Not to blow our own horn, but Quintessence only serves high-quality vegan food whether it's cooked or raw.
