If you haven’t yet tried these cute little cauliflower thins, then what are you waiting for?! I made these today for lunch for myself, and even my 9-year-old told me how yummy they looked! Now, they are not actual pizza or a bread substitute per say. They ARE a #glutenfree #nutfree way to enjoy your sauce and cheese. Pizza is great once in awhile for those who can eat it. If you can’t (allergies, food sensitivities) or you just want to switch things up for some amazing var...iety in your diet, these are the answer. Many cauliflower pizza crusts contain fillers, additives, and processed oils. These have simple ingredients: cauliflower, eggs, Parmesan cheese, and nutritional yeast. With only 100 calories, 9 grams of protein and 3 grams of protein, you can top this canvas with any fun toppings! Today I went traditional with marinara, spinach, Parmesan and red chili flakes. Turmeric Potatoes As Michelle and I get ready to launch our Project Plant-Positive TOMORROW, I want to share one of my favorite #plantbased dishes. Potatoes are a good, #highfiber , real-food source of complex carbohydrates. They are high in protein, potassium, Vitamin C and the antioxidants called anthocyanins. This means that are good for you digestion AND skin! Plus they help keep you full and decrease cravings. Turmeric is anti-inflammatory and can even help alleviate s...tress (and depression) which we could all use right now! Fun fact: make sure you add black pepper to your dishes made with #turmeric : it aids in improved absorption of turmeric, thus more #antioxidant and #antiinflammatory benefits! Pair this dish with a lean protein, like these lentils that are also high in fiber, and some veggies and you’ve got a complete meal. Ingredients: 1 pounds potatoes 4 tablespoons of olive oil 1 tsp ground turmeric 1 tsp of @traderjoes chili powder 1 tsp garlic powder 1 cup of kale 2 cup of cooked lentils 1/3 cup of tomatoes Fresh herbs- basil, parsley, dill as desired Salt and pepper to taste. (It is important to add pepper to increase absorption of the turmeric!) 2 tablespoons of grated Parmesan if desired Recipe: 1. Wash and dry potatoes. Cut into bite sized pieces. 2. Add olive oil to skillet on medium heat. 3. Add in potatoes and spices. Stir and then let sit until one side is golden brown. Usually around 5-7 minutes. Turn potatoes and cook for another 2 minutes. 4. Add in kale, tomatoes, lentils. Let cook until potatoes are fully cooked. 5. Add fresh herbs and add desired amount of salt and pepper to taste. Serve and enjoy! Great as leftovers with eggs for breakfast or Sunday brunch!
