While processing maple syrup we regularly check to make sure that it is actually "syrup". In this picture you can see the hydrometer floating in the freshly drawn off syrup. A reading of 66 Brix indicates that we are at syrup, perhaps a bit heavy. If it is under it is boiled longer, if we go over we can dilute with fresh maple sap to ensure every drop is a consistent and pure product! #maple #foodfoodfood #ageducation #knowyourfood #qualityproducts #lovewhatyoudo
