Happy Thursday! Hard to capture the beauty of this morning but it’s going to be a great day! We have our monthly vet check here first thing this morning and then lots of prep for shipping cheese next Monday for the holiday season! . . Hope you all have an awesome day!

Happy NATIONAL CHEESE CURD DAY! How did we almost miss this?! Oh my goodness what a day to celebrate! . . I get a lot of questions about what is cheese curd. Well, it’s the freshest form of cheddar cheese possible! You see curds form after the milk is acidified (using starter culture) and coagulated (using rennet). It has a jello like consistency at this point. Next is the best part of cheese making...we cut the curd to separate the liquid (whey) from the solids (curds). T...he process of cheddaring then begins, and the curds are stacked, cut up, pressed together and stacked again repeatedly. This is done to release more moisture and give the curds a specific texture. The curds are then cut into 2 to 3-inch pieces and then salted. . . We make over 13 flavors of curd- each flavor hand tossed in small batches and packed to ensure consistency and freshness with each package. You know it’s our fresh cheese when you hear the squeak when you bite into your treat! A friendly reminder that our fall hours start tomorrow! Today is the last day of our summer season (open 10-5) and we can not thank you enough for all the wonderful support we have received! Welcome! Hi there! Lots of new faces the past few days so I think it’s time for a little introduction. I’m Jess, the farmers daughter that married the farmers son, that’s just over here sharing the story behind Sunset View Creamery! . . Our farm is over 115 years old and we have been making cheese the last 15 of those years! We primarily milk Holsteins, but the deal for my husband was if he wanted to marry me, the Swiss were a package deal, so now we have a fair amount of b...ig grey beauties around here too! . . I like black coffee, cows, and wearing overalls (so much so that was all I would wear for years in elementary school- I have reverted back to my roots you see). Red is my favorite color, summer is my favorite season, and Mexican is my favorite cuisine. Being busy fills my cup, and fuzzy blankets are my jam. I crack myself up. No one else may find me funny but I giggle at myself all the time. If I didn’t farm cows I would farm cut flowers. . . While I hope that you someday will try our cheeses or may even come visit us here in beautiful upstate NY, my most sincerest wish is that you know that your dairy products come from caring and thoughtful individuals that pour their heart and soul into farming every day to bring a safe a nutritious product to your family! . . I think 2020 finally caught up to us. Jer and I both agreed last night we were feeling overwhelmed with the amount of things we have on our plate right now. I try to take life one day at a time in general, but it kind of feels like several days are attacking me at once! Not trying to jinx myself but feeling better about things this afternoon, lots checked off our list today, and once the boys wrap up this field, fall tillage will be out of the way too, and hopefully get us a bit ahead as we look towards 2021! . .

F I N A L L Y!!! I am feeling very victorious tonight! It’s hard for those not on the farm to understand the feeling of getting **that calf** that will not drink out of the bucket without some form of assistance to eat on their own! . . I’m going to blame this one on their neighboring farmer however (sorry Skip!) but Swiss are notorious for being hard to pail train. In a casual conversation one Sunday afternoon (and actually just before this guy was born) he asked me if I ...had an issue with that. I told him, Nope, never have, all of mine have been trained by day 3! Guess I ate some crow on that one... this one is only took 46 days! . . The crisp fall air has sure arrived this morning. There’s nothing better to me then chores with my Carhartts, hoodie and a warm hat! I’m not saying I am ready for my insulated bibs yet but this morning weather makes my heart flutter just a little! . . We have a vat full of milk already in process to make mozzarella this morning and everyone is milked, fed, and ready to take on this beautiful Monday! Have a great day folks!

I was feeding calves this evening and my nephew Carson (he is 7) comes trotting down the drive to tell me he dropped off cookies for us. They had made tractors and there was one for Poppi, Nonni, Jeremy, and myself. I thanked him and kind of figured he would just quietly head back down to his house. Nah, he had to explain to me how they were the color of everyone’s favorite tractor. I am a international gal so I got red, but I think his explanation of Jer’s cookie is pro...bably my favorite.. Well Uncle Jer’s is green like his big tractor (his Oliver) and I EVEN PUT YELLOW IN IT LIKE THE RUSTY SPOTS! . . Oh man, roasted by a 7 year old Jer! Pretty sure I took my last ride around the fields for the season on my favorite rusty trusty tractor. She’s not pretty, but dang is she reliable. That in itself is worth a million in farming. . . This year Jeremy even got me a new seat that doesn’t make you itch and a steering wheel that doesn’t turn your hands black! Oh! He also fixed the steering arm on the right side so my tire didn’t spin around on me anymore- put a bolt in it and everything! It was held together with wire for years! (It really is the small things in life they do for you ladies). Maybe some year we will find some extra cash to give her a new paint job, but for now I think she’s perfect just the way she is!
