Chris Dudko and Katherine Booth took me to Corner Bistro, as soon as I dropped my luggage, the very first time I visited NYC, sometime around ’96 or ’97. Later... that evening they took me to Sobaya, where I had udon for the first time and I can recall it clear as a bell. Sobaya would figure heavily in the years to come-living, working, hanging in the east village. It would become a go-to recommendation for anyone looking for something delicious, affordable, and exquisitely Japanese. 20 years later, I’m in Tokyo having my mind blown left and right: the salarymen grabbing beers before the shinkansen, the deafening sounds of the pachinko parlors, the drinking alleys with dozens of 10 seat bars, and of course, the food. Twenty years later I’m hanging out with my new wife, Rachel Schwab, in Shin Udon, having one of the finest meals of all time, crushing cold dipping Udon with chicken and geso karaage, ebi tempura, onsen tamago, mentaiko, DNA buzzing with 20 years of NYC, of ups and downs at jobs and now businesses, all beginning that first dinner with Chris and Kat.
