A note from our Co-Founder, Sims Foster: When I began to dream of what restaurant I wanted to create in the 140+ year old building that is now The DeBruce I would sit, solitarily, in the room that was to become the Dining Room. It was winter. It was cold. I would light a fire and leave the lights off looking out the windows on the tireless view of the Willowemoc Valley. A place of my childhood memories. I came to convictions. I wanted to deeply honor the guest, ou...r deep sense of place, our heritage and also a ‘screw the taco worship’ bent on what is fast becoming a decline in American true culinary experiences. I wanted to create a restaurant that was important. Whether it was the best would not be for us to judge. Excellence and Importance we could measure as guiding standards. My convictions without a chef partner would be meaningless. But I had met Aksel Theilkuhl. And as he saw the fire in my eyes, I saw it also in his. The Journey began. After 3 years of partnership and hundreds of amazing dishes that have graced the tables of our guests, Aksel is making the deeply difficult but clearly appropriate choice to depart The DeBruce in order to honor the needs of his family. And we support him without hesitation in the right life choice. And we will deeply miss him and by direct extension, his brilliant cooking. At The DeBruce I have always used musical construction in description of our efforts. Theme, Variation, Consonance, Dissonance, Minor, Major and the list goes on. A progression of food must be held to the same emotional standard of the progression of a symphony. Or a string quartet. Or a jazz standard. I believe that our First Symphony under Maestro Theilkuhl has been important and masterful. We will fondly revisit it often and are grateful for his immense talent, dedication and grindingly hard work. The applause is for him. And I will now sit back in our beautiful Dining Room. Solitary at times again. Surrounded at others with the amazing team that has come together to form the soul of The DeBruce. And begin dreaming our next piece. It will not disappoint. See more

The DeBruce & The North Branch Inn will be suspending food takeout service beginning Monday, April 20th. A huge thank you to those who dined with us this past month and brought our comfort food home with them over the last few weeks. We are privileged to be part of a family of restaurants, who we know will continue to support and feed our communities during this time. Our culinary teams will now be shifting our daily full time efforts to cooking for @asinglebiteorg, @fostersupplyhospitality’s food-based nonprofit project currently providing over one thousand meals a week to students and families in need during this crisis.
