SWEET POTATO LATKES Serve these with some unsweetened applesauce and/or dairy-free sour cream (cream from full fat coconut milk + lemon juice whipped together) Yield: 9 to 10 latkes... 1 pound sweet potatoes (about 2 medium sweet potatoes), grated 1/2 cup grated white onion 2 scallions, finely chopped 1/3 cup coconut flour 1 teaspoon baking powder 1 egg and 1 egg white, lightly beaten 1/4 teaspoon cayenne pepper 3/4 teaspoon salt 1/2 teaspoon black pepper 2 tablespoons or 1/4 cup olive oil Grate the sweet potato and onion and place in a medium bowl. Add in scallions, flour, baking powder, beaten eggs, cayenne pepper, salt and black pepper. Mix well to combine. Lightly Fried Version: Heat the 1/4 cup olive oil in a large cast-iron or nonstick skillet over medium heat. Working in batches, spoon roughly 1/4 cup of the latke batter into the skillet, pressing lightly down to form a pancake shape. Cook, turning once, until golden brown, about 2 to 3 minutes per side. Remove and place on a paper towel to absorb any excess oil. Serve with your choice of sauces. Baked Version: Heat the oven to 400 degrees F. Lightly brush 1 tablespoon of the oil to evenly coat a rimmed baking sheet. Spoon roughly 1/4 cup of the latke batter onto the prepared baking sheet, lightly pressing down to form a pancake shape. Brush the remaining 1 tablespoon of oil over the tops of the latkes. Welcome to another weekly edition of What I Eat on Mondays by the awesome @danielle.puma . . I spent a few hours on Sunday meal prepping and it’s going to make my week so much easier. I generally like to have the same meals (minus dinner) M,W,F and the same on T,Th so I get plenty of variety! Your girl loves to eat. It’s super important to make sure you’re getting in your portions of protein, carbs and fat. Do NOT be afraid of eating. You need to eat to burn fat and build m...uscle. Crazy concept, right? Eating too little will completely throw off your metabolism. You want to be in a calorie deficit in order to lose weight, but you do not want to be starving yourself. We do all the work for you with our nutrition program. You know what your portion sizes are and how many servings to have per day. Follow it and see/feel the changes. It works. I always start my day off with collagen coffee 1. Breakfast is egg white veggie cups, cauliflower hash brown patties, turkey bacon and strawberries 2. Lunch is this AMAZINGLY DELISH fall harvest salad (arugula, kale, pecans, beets, roasted butternut squash) with grilled balsamic chicken and I made a quick raspberry dressing to drizzle on top 3. After my workout later, I’ll have this cookies & cream protein shake (vanilla protein powder, frozen banana, cacao nibs) 4. Dinner tonight will be roasted rosemary & lemon chicken with sweet potato and green beans 5. Looking for a dip alternative for Sunday Night football? Check this one out .. BLACK BEAN HUMMUS INGREDIENTS:... 1 can of black beans, drained and rinsed 1 can of chickpeas, drained and rinsed 2-3 cloves of garlic Juice of one lemon 2 tbs chopped chopped coriander 1/4 tsp cayenne 1/2 tsp cumin 1/4 cup of water 2 tbs olive oil Salt and pepper to season DIRECTIONS: 1) Drain and rinse black beans and chickpeas. 2) In a food processor, combine all ingredients except the olive oil and salt/pepper. Process until smooth and thick. 3) With the food processor turned on, slowly stream the olive oil into the hummus. Taste and add salt/pepper to your liking. 4) Drizzle a little olive oil on the top before serving.
