On Monday, Governor Cuomo rolled out reopening guidelines for gyms in New York state, including wearing masks and only operating at 33 percent capacity. (Indoor fitness classes in NYC are not yet allowed to operate.) At this time, we have made the difficult decision to not yet reopen THE WELL New York. While we miss seeing our community in-person more than ever, we are deeply committed to creating a safe environment for our visitors, practitioners, instructors and all of our... team members at our Flatiron Club and we’re so glad we can still gather together online. We plan to reopen our doors when we have full confidence that we can do so in the safest, healthiest and most welcoming way possible. While we do not have a specific date for reopening yet, we will continue to update you. In the meantime, we’re excited to continue offering our virtual weekly events (most are open to all and complimentary!), as well as Mindful Movement and select virtual services online. Made from mung dal lentils, white rice, spices and a variety of seasonal vegetables, kitchari (also called khichadi) is one of Ayurveda’s classic superfoods and a favorite of THE WELL Kitchen & Table's guests. Filling yet light, it brings about a calm mental state (known in Sanskrit as sattva, which means mental clarity, peace, harmony and balance). Ingredients: 1/2 cup white basmati rice (or quinoa) 3 cups water (more if needed)... 1 cup green or yellow mung dal Himalayan pink rock salt 1/4 teaspoon turmeric powder 4 teaspoons ghee, divided 1/4 teaspoon cumin seeds 2.5 cups of your choice of seasonal vegetables 1/4 teaspoon fresh ground black pepper (optional) 1/4 teaspoon fresh chopped ginger (optional) 1/4 teaspoon mustard seeds (optional) 2-3 garlic cloves (optional) Fresh cilantro, chopped, for garnish Directions: 1. Rinse the rice (or quinoa) and dal, then add to a medium saucepan. Add water and soak for 3-4 hours (or at least 30 minutes). 2. Heat rice and dal until it boils, then reduce heat to low. Add salt and turmeric then cook, stirring occasionally until it has a mushy consistency, 20-25 minutes. 3. Place 2 tsp ghee in a small skillet over medium heat. Add cumin seeds and other spices of your choosing. Cook until seeds start crackling, 10-15 seconds or less. 4. Pour the warmed ghee mixture into the pot with the rice and dal. 5. Add the spring veggies of your choice to a skillet with 2 tsp ghee and cook until soft. Add to the rice and dal mixture and combine. 6. Serve with fresh cilantro for added flavor and digestive power.
