Microwave: cook for 3 minutes on High with 1 tbsp of water. Blanch: cook for 2 minutes in boiling water. Drain and place the carrots in an ice water bath for 2 minutes. Roast: Preheat the oven to 400F and line a baking sheet with parchment paper. Toss the vegetables with olive oil and spread evenly on the baking sheet. Roast 15 to 22 minutes or until browned around the edges. Slow Roast: Preheat the oven to 325F and line a baking sheet with parchment paper. Stovetop: Heat oil in a nonstick skillet over medium-high heat. Add the vegetable in a single layer. Let the vegetable "roast" and keep it browning for a minute for more flavor. Grill: Preheat grill to medium heat. Place the vegetables on the grill. Grill the vegetable until knife-tender and slightly charred, flipping every 2 minutes for 8 to 10 minutes. Cook Forever: Bring a large pot of water to a boil. Add the vegetable and cover the pot to bring it back to a boil quickly. Blanch the vegetable for five minutes. Heat olive oil in a skillet over medium-high heat and add the vegetable. Cover the skillet, turn the heat to very low, and cook for two hours.
