You want to slow cook the vegetables to build the flavor. We like #Felicetti Organic #Cavatappi, but really, any short cut pasta will do. Look for them in #Wegmans. Serves 4.... Here’s the #recipe: Brown 4 crumbled fennel sausages (squeeze out of the casings and break up with a wooden spoon) in olive oil over medium heat. Remove from the pan with a slotted spoon and set aside. Discard 1/2 the fat/oil from the pan. Add 2 cups of equal amounts of thinly sliced carrots, cleaned leeks and celery and one crumbled dried chile and cook slowly over low heat for about 30 minutes until the vegetables are very soft. Add one cup of quartered cherry tomatoes and 1/2 cup dry white wine and simmer for 15 more minutes. Add the sausage back in and save for the next day. Blanch one cup of shelled fresh peas, shock in ice water and save for finishing the pasta the next day. When ready to eat, boil a pot of salted water and cook your favorite Felicetti Organic cut--we've chosen Cavatappi. Reheat the pasta sauce while the pasta is #cooking. Toss the drained pasta with sauce and peas and warm through. Top with freshly grated #PecorinoRomano. " See more
