Harvested some rhubarb this morning. This equated to just over 25 pounds once the leaves were removed! Guess the pie and preserve season is about to get under way.

I know a lot of people wont eat leftovers but there's a lot that can be done with them. I mean who likes having the same meal over and over.. Lasagna is always the exception lol. Tonight I cut up some leftover pork loin and made it into gluten free fajita wraps. Chopped up some fresh pineapple, mango & jicama salsa - garnished with a fresh squeeze of lime and green onion from my window garden. Took only a few minutes to make and I didn't have to dirty any pans. #cincodemayo #stopfoodwaste #glutenfreefood
