The reopening menu was designed by Chef Alexander Harris by blending seasonal and local ingredients with flavors inspired by our students from around the world. For all day breakfast starting this Saturday, we will be serving daily pastries and sandwiches: ** SEC as inspired by South African boerewors meets grilled cheese with beef sausage, scrambled egg, and cheddar cheese on a housemade biscuit.... ** Omelette Sandwich as inspired by the Senegalese omelette with caramelized onion, potato, and spicy mayo on baguette. ** Pepper + Egg Sandwich as inspired by Middle Eastern shakshuka with feta and baby spinach on ciabatta. Our alumni classes explore entrepreneurship, public speaking, coping skills, goal setting, financial planning, and much more. Last night, we had our special live Shabbox event! Participants were delivered a meal kit filled with fresh ingredients to create Chef Alex’s original recipes for Berbere-Spiced Hand Pies with Tamarind Sauce, Fonio and Kale Salad, Yam Cake, and Challot. In our virtual classroom, Chef Alex then led step-by-step instructions on how to prepare the meal. Stay tuned for MANY more opportunities to engage with Chef Alex and our students coming up. The Emma's Torch Family is for life. We are committed to supporting our alumni through their graduations and well into their careers. For the past three months, we have worked closely with our alumni to help them prepare for and connect with job opportunities. Although it hasn't been easy, our family has seen significant success which we hope to continue on through the coming months.

Our last new staff introduction is for Daniel, our new Program Associate! Daniel recently graduated from college and comes to Emma's Torch through the Project 55 Fellowship. He has a background in Public Policy, Urban Studies, and restaurant management from working at his family's Japanese restaurant. Daniel is so excited to be joining the team for Emma's Torch 2.0 and can't wait to eat all of the student's creations!

Let's give a big welcome to Sierra! Sierra joined us last month as the new Program Manager. Before joining the Emma's Torch family, Sierra gained experience in organizing community gardens at food pantries, managing a commercial kitchen at a summer camp in the Catskills, and providing clinical social work services to families in New York City. As an LMSW and a lover of all things food, she is beyond excited to join our family and support our students and alumni.

To start off the week, we will highlight and welcome some new members to our team! Say hello to our new Leadership Development Fellow, Ruslan! Since Ruslan came to the US from Russia, he has let his passion for cooking guide his path to success. Ruslan graduated from our program back in February of 2019 and went on to continue to hone his skills in the culinary industry. Now, he returns for six months as a fellow to learn and grow his leadership skills in all parts of the business. Ruslan plans to use this opportunity to take the next step towards achieving his ambitious hopes and dreams for the future!

As exciting as it is to have our students back cooking and learning at our restaurant, COVID safety measures always come first. All students, staff, and guests must complete a wellness check and have their temperature read at the door. Our restaurant has been been transformed into a well-ventilated classroom space where students can properly socially distance. Everyone must wear a provided mask at all times and every 30 minutes, students must wash and sanitize their hands. So if you're walking down Smith Street and hear Chef Alex excitedly yell "How long has it been since we've washed our hands??" you'll know we're serious about the safety and well-being of our community.

We are so happy to officially begin Emma's Torch 2.0! Starting today, Cohort 20 will complete our revamped culinary training program that will prepare them to work in the culinary industry. Thank you to everyone who has supported our efforts during these trying times, we hope you'll continue to support us as we start this new journey!

One more day!!! Tomorrow, we will open our doors for our students to return to our culinary training program. We are so excited for this opportunity to safely restart our program for our 20th cohort of students. We have been highlighting what students do each week of our 10-week program while awaiting their return, and we have finally made it to the end of our countdown. Week 10: Graduation! In the final week of our program, students will craft and finalize their own dishes t...o serve for our graduation ceremony. Building an entirely original menu is not only a powerful educational experience, it is also a celebration for the amazing work and backgrounds that each one of our students brings to the table. The end of the program is only the beginning of our graduates' prospective careers and the lifelong community as a member of our Emma's Torch Family. See more

Only 2 more days until we can welcome back our students! Each day until then, we are highlighting what our students experience in our 10-week program. Week 9: Finalizing the Toolkit As students finish up our training program, we will ensure that they are fully equipped for success in the culinary industry. With only two weeks left at Emma's Torch, we will partner with our students to narrow down job placement options based on their passions, strengths, and individual needs. Students also begin preparing their recipes for the final graduation menu using their training and personal experiences to create a dish that truly represents their hard work.

Week 8: Passing It Forward The student becomes the teacher! Students will begin helping the next cohort prepare for the different roles of service to cement their culinary training. Here, we will also have conversations on worker's rights and advocacy skills.
