Neversink Spirits was founded by two long-time friends with a passion for spirits, wine, food, and nature. Making spirits is their calling, and apples their muse. Inspired by the great european traditions of Calvados, eau de vie, as well as the rich diversity of gins from around the world, the partners at Neversink drew from the old-world traditions and the emerging dom...estic styles to create their distinctive line of spirits that celebrate the local fruit of New York State. To create their flagship spirit, Neversink Gin, they macerate a single-estate 100% NY apple base spirit in juniper berries overnight. The following day, the juniper-macerated base spirit is distilled through the full array of eleven botanicals: juniper, coriander, cardamom, star anise, cinnamon, orris root, angelica root, elderflower, orange peel (fresh), lemon peel (fresh), and grapefruit peel (fresh). The resulting spirit is a nuanced and delicate gin, with warm baking spice and fresh citrus accenting the apple base.
