Enjoy this super informative How T...o video and recipe. #unclegiuseppes #whatscooking #focaccia # #fallflavors Fall Focaccia 1 Uncle Giuseppe’s Pizza Dough (22oz) 1 small ball burrata lb Gorgonzola Dolce lb Speck (sliced thin) delicata squash (sliced very thin) small red onion (sliced very thin) Fresh thyme cup extra virgin olive oil 1)Remove pizza dough from package and place in a large nonstick baking pan, rub with oil and cover with plastic wrap. Allow dough to proof for 1-2 hours un-refrigerated in a somewhat warm environment. The longer the proof the lighter the dough. 2)Cut delicata squash in half lengthwise. Scoop out all seeds and discard. Place squash cut side down and slice very thin. If thin slicing is not possible, slice the squash, toss with olive oil salt and pepper and roast at 450 for 10-15 minutes before adding to the top of the dough. 2)Once dough is fully proofed, begin to stretch, free form to the shape you desire. The more you stretch the thinner the pie will be. The less you stretch the thicker it will be. Pizza making is an art, there is no perfect shape. Have fun with it. Once dough is stretched, using your fingertips press into the dough. 3)Begin to top the dough. Tear burrata and distribute evenly over the top. 4)Next evenly distribute sliced delicata squash and red onion. 5)Next, piece out gorgonzola. Gorgonzola is soft and creamy so spoon out small portions with a teaspoon and distribute evenly. 6)Rip slices of speck and place that down next. 7)Sprinkle fresh thyme over everything and drizzle with olive oil. 8)Place in a preheated 525F degree oven for 15 minutes. Sides should be golden brown.

Enjoy this super informative How To video and recipe. #unclegiuseppes #whatscooking #chickenpotpie # #fallflavors Full video on our website: https://uncleg.com/news-12-whats-cooking/ Chicken Pot Pie 1 Uncle Giuseppe’s Rotisserie Chicken (pulled and lightly shredded) 1-14oz container Uncle Giuseppe’s Chopped Mirepoix (carrots, celery, onion) 1-6 oz box Cremini Mushrooms (sliced) 1 cup frozen peas 3 Scallions (thinly sliced) 3 cups Chicken Stock 1 cup Heavy Cream 1/2 lb Butter 1 cup Flour 2-9 Deep Pie Shell 1 box Pie Crusts Fresh Thyme, Rosemary and Sage (1 sprig each, fine chop) 1 large egg, with 2TBS water (beat well) Salt and Pepper to taste 1)Preheat a medium saucepot to medium high heat. Add butter and mirepoix (carrots, celery and onion), season with salt and pepper. Stir mirepoix often. Stir for 10-15 minutes or until vegetables begin to get soft and onions become slightly translucent. Add mushrooms. 2)Add flour to vegetables. Stir well to incorporate all the flour into the butter. Once all flour is incorporated bring heat down to low. 3)Add chicken stock and heavy cream. Allow mixture to come to a slight simmer. Once mix simmers remove from heat. 4)Add pulled chicken, peas and fresh chopped herbs. Mix well. 5)Place pie shells into a preheated 375 degree oven for 5-7 minutes. Check often and pop any bubbles with a fork that might occur. 6)Remove pie shells from oven and fill evenly with pot pie mix. 7)Place pie crust over mix. Pinch sides of crust to form a seal. Puncture the center of the pie crust to allow steam to escape. Brush egg wash. 8)375F 30min
