At Druthers in February 2018, drinking IPAs and chowing on our favorite Buffalo chicken pizzas, we were talking about our frustrations with the lack of on-the-go healthy food in the area and our expanding waistlines. It was around this same time, Brandon and Allen had a Eureka moment: ditch the corporate career, get back to basics and start living for themselves back to their roots. Over the course of the next few months, we brainstormed and researched, anything and everything. Brandon quit his job, they sold their Boston condo and headed back to Saratoga Springs. URBAN ROOTS KITCHEN was born.
