People tend to cook fish like they cook chicken, till it's so dead that it won't even experience an afterlife. Swordfish is most delicious when it's cooked like a medium steak. Well done will just taste like rubber. If your protien is sustainably raised and cooked within two days of being butchere...d, there shouldn't be any concern. If you buy a filet like salmon or swordfish, there can be a lot left over.
